Mediterranean Quinoa Salad Recipe

This Mediterranean quinoa salad recipe is the perfect side meal to bring to your next barbecue.
4 Tablespoons orange juice, freshly squeezed
3 Tablespoons lemon juice, freshly squeezed
2 Tablespoons olive oil
2 Tablespoon balsamic vinegar
1 teaspoon brown sugar
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon fresh ground pepper
1 cup quinoa
2 cups water
1/2 cup cubed feta
1 red bell pepper, chopped
1 lb cherry tomatoes, cut in half
1/2 cup finely chopped fresh basil leaf
Place rinsed quinoa and water in a pot, bring to a boil.
Once boiling, reduce heat, cover with a lid and simmer for 15 minutes. Set aside to cool.
Prepare the salad dressing and set aside.
To assemble the salad, place a scoop of cooked quinoa.
Top with chopped vegetables, feta and basil.
Drizzle with dressing and enjoy.
