Cocoa Muffins Recipe

This cocoa muffins recipe is topped with a homemade chocolate glaze.
1 1/3 cups all-purpose flour
3/4 cup good quality baking cocoa
1 Tablespoon baking powder
1 cup granulated sugar
1/4 teaspoon salt
1/2 cup water
3/4 cup butter, melted
1 Tablespoon vanilla
1/2 cup mini chocolate chip (optional)
2 tablespoons butter
2 ounces unsweetened chocolate
1 cup confectioners' sugar
2 tablespoons boiling water
Preheat oven to 350F
Line a muffin pan with paper liners
Whisk together flour, cocoa, baking powder, sugar, and salt in a medium bowl.
Add in water, melted butter, vanilla and eggs into flour mixture and mix until smooth, add chocolate chips in if wanted.
Fill liner 3/4 of the way and bake for 25 to 30 minutes, check with a toothpick, make sure it comes out clean
In a small pot melt butter and chocolate, sift icing sugar and add to melted chocolate, also add boiling water, mix together well.
Drizzle glaze over muffin, and garnish with fresh mint and strawberries
