Baked Rhubarb Custard Recipe
This baked rhubarb custard recipe is a great way to prepare rhubarb.
4 1/2 cups rhubarb (about 6 medium stems), cut into 1/2 inch pieces.
1/2 teaspoon finely grated orange zest
1/4 cup granulated sugar
2 large eggs
2/3 cup heavy cream
2 Tablespoons orange juice
1/4 cup all purpose flour
1/2 cup granulated sugar
Preheat the oven to 350 degrees F.
Select a 9 inch baking dish.
Wash the rhubarb, cut into half inch chunks and put into a large bowl. Stir the zest into the sugar then sprinkle the mixture onto the rhubarb.
Transfer into the baking dish.
Whisk the eggs with the cream, orange juice, flour and remaining sugar and pour over the rhubarb.
Place into the preheated oven and bake for 1 hour and 15 minutes.
Remove from the oven and place onto a cooling rack.
Let cool for at least 20 minutes before serving.
Delicious with ice cream.
